Just thought Id share my experience.
JDSBBP was the bourbon that got me hooked. The first time I cracked open a bottle was an incredible sweet caramel banana bread experience.
I then moved onto other bottles which made me forget that exact same first experience with a fresh bottle.
I had a pour today and suddenly realized…it didn’t taste as good as I remembered. Not even close. I couldn’t even get a nose on it.
The bottle had about 1/5th left. It was at a point where I thought maybe this is tapped from oxygen. So I did the unthinkable and dumped the rest down the drain.
I got a backup bottle I had and tried that and it was a completely different experience. Right back to the first sip I had. Incredible.
Just want to mention that if your whisky is tapped sometimes it’s time to let it go. Or save it for your friends who don’t give af about bourbon and just want to drink ;) Whisky does go bad when you get super low on the bottle and it doesn’t take long.

Not sure if you’re just referring to my like of JDSBBP. With bourbon age can actually be a detriment past a certain age (usually 12-15 years) because it becomes an oak bomb and can be off putting to those who don’t like that note
For instance Blantons SBCS is like 7-8 years and superb. So age isn’t everything. Idk what the age on this JD is but I like it.
Your point is as valid as mine. It’s sort of a pseudoscience. Just describing my experience.
Not sure what to say other than the fresh cracked bottle is vastly different. It’s the same proof/batch as well. I think when you get down to the last 1/4 of the bottle the ticker is really running. But when you’re more than half way full you have some time.
I see. Well many of the flavors of whisky are on the oils. So it can only make sense that as they evaporate so does the flavor. And the more air in the bottle, the more they evaporate. This is a guess and it’s a bit of a pseudoscience. Probably not a helpful comment but that’s all I got.

Absolutely. In my experience some bottles open up and teste even better and some go south.
