Replacing my stolen bike - what should I look at?

Unfortunately right after completing my first 100km ride, my 2016 Cannondale Quick CX 4 got stolen :( That was my first bike that I spent a lot of time in the saddle on! It really sucks.

However, I am looking to replace it with something better now considering I've fallen in love with cycling again.

I am however, having an extremely hard time finding a bike for me. I have been looking at the following bikes but I have no idea if they're right for me, and if there's better options.

Over the past four months I've ridden 1200KM and it would be a lot more had my bike not been stolen from me! I've started taking it much more seriously in the past month, my average casual ride is about 40KM. I am looking to complete century rides (161KM/100 miles). I've ridden casually for years but I am looking to take it more seriously now.

What's your price range, and have you considered second hand?

My price range is $1000-$1500 CAD (upper limit of 1200 USD). I have considered second hand but I have not found anything within my needs/price range on pinkbikes that is local, and I have no idea what to look for in local classifieds.

What's your intention with the bike - commuting, fitness, touring, sport, etc?

Fitness, commuting, long rides for fun. I am tentatively interested in the idea of touring however that's just a fantasy.

How far will you be riding, and how often?

Last 2 months I've been hitting 600-700KM a month due to having free time, but average over the season is about 300-400KM monthly. My long rides would ideally be 80KM , and I am looking to keep pushing the distance.

Riding conditions: roads, pavement, trails, single-track, off-road? Flat or hilly? Traffic and weather.

Most riding, about 80% would be on paved surfaces but some country roads here are in terrible condition. There are some hills in my area but it is nothing insane. Steepest hill climbs here about 400M/1300ft over 18KM.
