($500-1000) Bike recommendations

Hi all, completely new when it comes to bicycles and cycling. I am looking for bike recommendations for exercise. I have viewed a few similar posts and saw a lot of mentions about the Escape Disc and Kona Dew. I live in the desert so I am looking for something that works on the road as well as bike trails. Would greatly appreciate suggestions and in depth explanation to help me choose the right bike for me. Thanks!
