Advice for first AND multi use bike

Hello

I'm 35.. 5'4.. 165lbs and I am looking for something of a multi use bike

I'm in Ontario Canada and my LBS don't have a very big selection so i am hoping reddit can help me narrow down some options so that if i have to drive a few hours to the cities to see a better selection I have an idea of what i am looking for before I get there

Adventure is sort of key for me.. hiking, overlanding recently trail running and with the discovery of some new cross province gravel trails im hoping to add biking to the list

So what im looking for in a bike is something with drop bars.. that can handle road, gravel and hills.

I would like to be able to load this bike up and head out on multiple adventures (day trips/ overnighter/ cross province.. who knows). I would also like to commute to work (I live in a hilly farm/ rough backroad area) and pick up the odd grocery from town (15km ride).

this bike... also needs to pull a little buggy of some sort for my 10 year old 80lbs dog - This part would just be day trips on flat gravel trails and mostly just for him to rest

Im not really putting in a price range because.. I dont know where to start yet I would LIKE to be between 1000-2000cdn$ .. new or use.. as long as used is still easily serviced today

two local bikes I liked - were the " Opus Horizon AL Claris QR" and the "Giant Content AR disc 4" ANDDDDDDD the "Specialized Diverge E5" the E5 is in a Size 58 which im told is maybe to big for me

So if you can point me in a direction to research - or recommend and of the bikes or teach me anything I would greatly appreciate it. Thank you!!!
