I read this as a kid (late 90's, early 00's). I remember one story in particular in this anthology about a young girl who gets her hair turned to a golden color by a witch, and her prince/lover gets turned into a dragon. The witch says that she must walk around the earth in iron shoes and then the prince will be free.

There were twelve stories I want to say, all of them coming from different areas of the world. There was one set in China and one set in the Middle East. That's all I can remember.
