(Theory) Noone is changing Maeve, she is changing from experiences and outside stimuli....like a human.

Maeve has gained the ability to grow like a human, the two traits she had a rise in was Self-preservation and paranoia, which would be consistent with what has been happening to her. She is sentient and able to grow around and above her own programming.
