Help with gaining weight/muscle

I'm currently 19 years old and roughly weigh 45kgs (100lbs). I eat regular healthy meals, but have to avoid red meats and most dairy products. What is the best way to gain weight while being able to stay away from red meats and dairy products? I have never been able to gain weight over 110lbs nor able to build muscle.
Do weigh powders taste/work well with Almond or Rice milk?
