To vibrato, or not to vibrato

I have seen many pieces where the strings play vibrato when it is not notated in the score to do so, and I cannot tell whether this is just due to mirroring what they have heard when others have played it, if it is in the composer notes, or if the scores I have found are simplified.

So my questions are:

Do you assume that you need to play in vibrato unless otherwise stated?
If so, how would I notate a section to be played without vibrator? Do you see composers using things like composers notes to explain the presence of vibrato throughout a whole piece etc?
