Moving from a Sony Z150 to DSLR/Mirrorless...What am I getting into?

My background is in news production and when I moved to the corporate world, I bought a Z150. The price was right for the company at the time and it was what I was most familiar with -- shooting in a "camcorder" style. Recently though, I've been seeing some of our partner orgs shooting on Sony A7SIII and the video looks so much more filmic. Maybe that's post, but I think there's a lot to be said for some of those cameras just having that look out of the camera too. The Z150 definitely seems to have a more "news" video feel, even in 24fps. I can't ever seem to grade that away into that film sheen you see in movies and tv shows -- which might be why I liked it so much.

Recently I've been talking to the boss and they're willing to make a huge investment in our video production and giving me a budget that I can't believe to upgrade some cameras, lenses and tertiary equipment (12k up front. Maybe add'l 3k towards the back half of the year).

I've been eyeing the Canon C70 and R6MII for replacements of the Z150 and my Nikon D7500. Looking at the 24-70 f/2.8 L USM RF, the 70-300 f/4 L IS III with adapter and another TBD lens (either wide angle RF or another EF (24-105 maybe or 50mm cine). A lot of my shooting is outside, so I do want one really good low light lens, but the others can be f/4.

Most of my shooting is run and gun style, so I need flexibility above all and I certainly hesitate in making a big change like this.

One thing that makes me pause is that the lenses aren't servo. Coming from an ENG background, that's the first time I'd ever work with that. So just curious for those shooting with DSLR/Mirrorless as opposed to camcorder style -- are you pulling your zooms manually, is it done in post, or is there something I'm missing about that?

Anything else I need to keep in mind before I make a final decision to jump to mirrorless? Is this a terrible idea for a guy who grew up in a camcorder ENG world?
