Potatoes! What is going on with mine?

I can't recall what variety I planted, but they were a pretty standard white potato. The tops started to die back early August, but I let them go until mid-August. At that point, I cut back everything above ground and then let them sit for a week. I wanted to wait, but we were due for a lot of rain and I didn't want them to start to rot. However, now that I've dug them up, I'm wondering what is going on with them.
