Best time to plant potatoes in TX for a fall harvest?

I have quite a few russet potatoes that have sprouted, and I'm curious about what temperature they will require in the early days after planting. I'm near Waco, and from what I've read, they don't stand up well to extreme heat. Would it be best to wait till late August/early September? This is just going to be kinda of a trial run, but I've never grown potatoes. Also, should I place my grow pots where they will get sun half of the day? Thanks in advance to anyone who can help.
