Recipes that include beets for those who aren’t big fans of beets?

I have gotten an abundance of beets and I’m not sure what to make with them. I don’t eat beets often and while I don’t hate the taste, they can be a little overpowering for me. Is there anything that can mellow them out or hide the flavor? I appreciate any recipe suggestions you may have.
