My 10yo daughter wants to do a 14 day vegan challenge

I'm doing it with her along with my 7yo son. I'm excited but nervous, so I've been researching it. We start the challenge on Monday. Any advice, especially for lunch? It seems like breakfast and dinner will be ok, but for lunch they usually eat a meat and/or cheese sandwich. I can only think of PB&J for a sandwich.
Also, my son can be lowkey picky. So yeah any advice would be great, thanks!
