All Inclusive holiday as a vegan

Has anyone been on a regular all inclusive holiday, to a typical beach destination? I really fancy a totally relaxed beach holiday where I don't have to worry about going out for food etc, but I'm concerned there won't be anything to eat at most resorts.
I found one in Cancun that specifically states it caters for vegans etc but it's way above my budget!
Any suggestions?
