Promotion 30 day vegan challenge - why is there a cow on there?

I am not vegan, but was looking for vegan breakfast tips so I found this sub.
Now I am curious what the cow is doing in the picture for the 30 day vegan challenge - hugging with a vegan it seems.
At seems odd to me since cows as depicted only exist due to non-vegan thinking. I wanna understand though, is it just as simple as 'we appreciate all (animal) life' or do I miss something?
