The roll is probably the most important part, and the Amoroso (Philly based company) is the best, but available nation wide. Second most important is the meat. And as a guy who sold all the biggest and most iconic Philly shops their steak, I can say that it’s literal dog food. They go thru so much that every penny per pound matters to them, which has created a reality where 90% of them use a meat made mostly of organs and throat meat. So restaurants who only have a “Philly cheesesteak” on their menu among many other things tend to buy better steak, and making a much better sandwich. I don’t care if you’re a whiz or a provolone or a white American cheese guy, those too are available anywhere. Peppers and mushrooms are peppers and mushrooms
