UnRaid without Parity disk?

Hi guys! I’m thinking about a NUC8i7BEK to run as an UnRaid and PMS server. Maybe with a 250gb nvme and 32Gb for the transcode on RAM. All my files are on the ds918 NAS. And maybe I’ll buy an expension unit in the future. I know that your parity disk should be equal as the biggest TB drive in your server. However, in a NUC doesn’t fit a 3.5”HDD, and also (don’t hate me) how necessary is a parity disk? The NUC is only gonna function as PMS and radarr, sonarr kinda stuff, no VM’s or other important software. Is it possible to do a 250GB NVMe in the NUC as a parity and have around 50-80TB across 2 NAS systems as SMB shares? Once again, don’t hate me ;)
