UnRaid for dummies

Hi guys! I wanna start with UnRaid for my Plex server. I have a DS918 with /- 50TB on HDD’s. My DS918 is full and I also have an extra fileserver (Fractal design XL 7 windows10 build) The Plex media server is on the NAS but im thinking about buying the Intel NUC8i5BEH2 (or i7) to run as PMS. I hear a lot of people that I need to look at UnRaid to run as PMS but I really don’t have any experience at all. I have 30 years of experience with windows. Never had any Linux or other OS.. Can you guys recommend me a good YouTube video for dummies like me? Like real dummies.. I also configure all my HDD as JBOD, so when I shuck a drive, I just put it in the Fractal and assign a letter to it. I don’t want or need any raid settings. I make excel documents backups from all my files, so whenever a disk is dead I just copy the excel in my seedbox. Thanks in advantage! Cheers!
