Tracking backyard ultra on GPS Watch

I need advice for tracking a backyard ultra/last man standing event on my GPS watch. Do you keep the activity going the entire time including the rest time between laps? Or do you pause the activity at each lap completion and un-pause at the next lap start? I don't want to create a new run for each lap. Looking for advice from someone with past experience. Thanks
