What are the differences between vibes / traditional usage / messaging between different serif typefaces?

I've recently gotten into bookbinding and typography, and I find myself at a loss as to what fonts to use, especially for body text. The info I managed to find online is just the vague "serifs are traditional", and "didone is elegant". However, I have a hard time deciding what style to use for my books. Humanist? Garalde? Transitional? Didone? All of them have typefaces that are legible in a block of text. Are those different types traditionally used for different purposes? Should I use them for texts from different time periods? Is there a general rule as to what serif style goes with what kind of text? Or maybe even which typeface from the same style (I mean, Golden type and Centaur are both humanist, but they seem completely different)?
