Presumably this one.
Seems like there's two schools of thought regarding gelatin.
1) Bloom it in apple sauce
2) Roughly chop and spritz with water before adding to hot syrup
Both are ultimately ways to reduce the water content in your gelatin to the lowest possible amount.
Also seems like some recipes use pectin as well as gelatin. Invert sugar seems pretty relevant for proper chew as well.
