When booking a flight, how do you know if its actually a good deal?

So I am looking for flights and if I have never looked at the specific flight and kept track of all the prices, how would I really know when there is a good deal? Sure I can see that on x date its cheaper than x date, but I want to know how to find those dirt cheap flights I hear people snatching up for a fraction of the price and actually know its a good deal based on data, not my assumptions.
If someone can give me some insight I would greatly appreciate it, super frustrated over here!
