Is it viable to pay for your vacation as you have money available ? Or is it better to pay all at once ?

After many many post here and ideas being scrapped, my girlfriend and I are finally planning a trip to Japan but we dont have a ton of money saved up so we want to pay as we go. We're planning to go between the months of september- december for a week so we have a lot of time to save up but would it be an okay idea to pay for things at different times ?

like if we have the money for the flights can we book the flights first ? and then pay for the hotel like a month or two later ? and then just save up the money for other expenses as we get closer ? Or is this a dumb way to go about it ?

Any ideas or tips would be great :)
