[Question] Plan to record 120+hrs of workshop labor. How do I balance frame interval with total playback length, and resolution with device storage space?

I'm a glasscutter. I have a large stained glass window to create that will take approximately 120 hours of shop time. I want to capture this with LapseIt.

If I capture one frame per minute, then that equals 2 sec of playback per hour of work @30fps. 120 raw hours = 240 sec, or 6 min, of final video. That seems about the right length for this size of product. Especially since my product will remain stationary, growing slowly, while I dart around the shop. I'm mostly confident that my phone can store 6 min of high resolution photos, but I'm not sure. It doesn't have removable storage so I can't expand it.

This will be my first time using a time lapse recording device. I can't delay starting the glass project, or it won't be done by Christmas. I watched a few instructional videos and purchases the pro version of the app. I have a Pixel 1.

Basically any and all advice is appreciated.

Edit I mentioned this project to a photog at work, he is going to loan me a GoPro for a few months. So I'm gonna start planning again with the GoPro.
