I apologize should this have been answered before.
I am trying to educate myself more on IV options selling, but my Broker (EU based) won't give me any info on IV.
I know that for SPY I could look at the VIX, but where could I find the IV for other and essentially any ETF or stock? Are there any good sites to look at?

I use Tradestation and it has a few built in indicators that measure option IV a few different ways so check your platform first and see if it offers anything relating to volatility in the indicators.
Also checking for names that have earnings coming up. That usually spikes volatility.

Most platforms you can open an account without even having to deposit money : and you can still access/use the platform via the simulator account.
