How to disable Option+letter special characters globally in MacOS?

In any text input in MacOS if I type Option b I get ∫. If I type Option f I get ƒ. Those should be commands to move forward and backwards by a word. I cannot for the life of me get the OS to stop doing that. I've managed to disable it in iTerm2, but every other app still has this.

I've tried changing the Keyboard to ABC, ABC extended, US, US International PC, Unicode , I've tried a custom keyboard that disables the Option key (that certainly stops the special characters but also stops the option key from being a modifier). I've tried setting the Option key to have "no action", again prevents it from being used as a modifier key.

If anyone has any idea I'd much appreciate it. I'm running Sonoma 14.2.1 on a Apple M1 MacBook Pro.
