Last tenants left us all kinds of servers, switches, and most interestingly..SIP-based VOIP box... how do we get this baby going?

Apologies if this is the wrong location to ask this.

The tech startup I work for just moved into a new office in NYC. The last tenant (another tech startup that ran out of cash) left us some decent equipment: a Dell 64-port managed switch, some kind of hardware firewall, a hardware VPN Netvanta box, and an Edgewater Networks VOIP box (specifically a 4808T4) along with roughly 100 miles of plain white CAT5.

We'd like to get this thing hooked up and use it if possible. What would we need to do to get it going? How would we go about getting a phone number? Background, I spent 5 years as a SysAdmin, but I've never touched one of these and am having a hard time finding any info online.
