When would you do a server or firewall upgrade that requires a reboot as a two-person IT team in a small company?

Edit: I think we have our answer. 6pm on a weekday

I’ve been doing it 11pm on Saturday, but my friend suggests this is overkill, and that 6pm on a weekday is just fine and doesn’t ruin your weekend.

However, Saturday night seems to be the second most popular answer

Two of us are asking this question in the hopes of getting honest, real world feedback. We have a difference of opinion about when maintenance should be done, and just want others to give their honest, real world, answers to the question. One of us believes in one approach while the other believes in another, and we just want to find out what the consensus is. We both contributed to this question:

You're a small company that does most of its business 9-5. You have about 125 office workers and a total of 350 employees. You have a two-man IT team, basically a help desk support person and you, basically the "head" of the department in the sense that no one in the company knows nearly as much as you do.

You call the shots on this kind of stuff, and no one really pays much attention to what IT does. You need to upgrade a server or the firewall, and it will create a 5-15 minute internet outage. When do you do it? Just to be clear: the question isn't "when is the best time to do it," it's "when would you, IRL, actually do the update?"
