Suggestions on configuring multiple Dell VRTXs with M620s

I recently discovered that we have have two unused Dell VRTX enclosures, each with four M620 blades. Each enclosure is comprised of five 600 GB drives and twenty 900 GB drives, and each blade has its own two 300 GB drives. I'm not sure what my predecessor had in mind for these servers when they were ordered (Documentation? LOL!) so figuring out how to put them to use has been difficult.

We are a Windows shop so my options are limited: No ESXi, no Linux, etc. Also, we don't have permissions to Enterprise level functions, so we can't use them as domain controllers, DHCP servers, etc. These servers can be added to the domain, but that's about it. We have a few servers that are Hyper-V hosts or file servers that are close to EoL, so chances are a few of the blades will be the tech refresh for those machines. Other than that, I'm at a loss, so any suggestions would appreciated. Since the two enclosures are identical, clustering is something I've also thought about.

The big thing that I'm most concerned about is how to divvy up the enclosure's storage. Since all of the drives aren't identical, I'm having a hard time deciding on how to set up the RAID configuration(s), namely for the 600 GB drives. I thought that each blade could get five of the 900 GB drives for itself, either in a RAID 5 or RAID 6, but I have no clue on how to utilize the 600 GB drives.
