Towns To Visit For A Daytrip

What are some places to visit in NSW near Sydney for a day trip when it feels like you've been everywhere?

Something like a little town with good food, interesting shops and some lovely photographic opportunities in the evening nearby/on the way back.

I've been to Southern Highlands towns (Berrima, Bowral etc), Hunter Valley/Newcastle area (Morpeth, Wollombi, Pokolbin etc), Lithgow/Orange and surrounds, Central Coast, Blue Mountains including Richmond and Pitt Town, places near Wollongong (Robertson, Jamberoo, Thirroul, Kiama way etc).

Mudgee perhaps but anything else worth visiting?
