So I recently stumbled upon a great fish market that specifically sells sushi-grade fish, ranging from fluke and sea bream to tuna toro and uni. The market is great, but I want to broaden my horizons even more. With that being said, home chefs of the sushi community, where do you prefer to get your fish? Do you have a local market, or a fisherman friend? Do you catch your own fish and make sushi (I’ve always wanted to try this)? Do you prefer to order through a website and have it shipped? Where do you find the best variety and most options? Is there a better method I’m unaware of? All questions and comments are welcome. I’d love to hear everyone’s thoughts!
