[2005 Outback Limited] Front hub/bearing replacement questions

I've got some grinding coming from up front and, best I can tell, it's the driver's side. I replaced the front brake pads a week ago hoping that would solve it but no dice. I'm watching some videos on YT and it seems simple enough to replace the whole hub assembly. I've also found a video re-packing the bearings and keeping the hub which seems a bit more involved but, assuming I can buy/borrow/rent the tools I don't have I'm game for that as well.

My questions now are: Is there any merit to re-packing the bearings instead of replacing the whole hub? Cheaper vs Simpler? And is this the kind of repair I should do in pairs and get the passenger side at the same time (I'm planning to replace the front rotors while I'm at it anyway) or just assume if it ain't broke don't fix it?
