Rolling Over Profits Into New Stocks??

So I recently started investing. Bought 20 shares $PENN @$5.55, with the $180 profit i have so far, would it make sense to sell 10 of my shares and basically “flip” that into, say, 1 DIS share or 2 RCL shares? Or do I continue to hope that that stock rises (it was $38.28 on 2/14)? Same thing with BLMN- 50 shares @ $6.38, now & $7.75.

Just curious on everyone’s thoughts on this sort of strategy.
