Canon vs. Non-canon

Just a curiosity here. What constitutes canon in Star Trek vs non-canon? Im used to Star Wars, where itā€™s ā€œfilms and shows yes, books noā€, but there was a stellar discussion about ST:Ent (if I could link the post I would); somewhere in the discussion, someone mentioned there are 5 or so books that ā€˜rewroteā€™ the series finale, and are considered ā€˜more canonā€™ than the show.

Is there an official listing of what is and isnā€™t canon, or is there anything that defines what is and isnā€™t canon? Or is it kind of a ā€œpersonal canonā€ sortā€™ve vibe?
