Why do we assume the universe is infinite? And other space questions....

It seems like people assume the universe is infinite... that there is no center... etc.

Being that nothing else is infinite that we can see in the universe wouldn't it be logical to assume that the universe isn't either?

Also... can we not tell the direction that galaxies are traveling with red/blue shift? Like galaxies that are more red or more blue or something? Couldn't we estimate a center or origin point of the galaxies somehow by measuring the direction galaxies are traveling?
