Duck done the same as on my other postβ¦ skin pan seared quickly at the beginning. Vacuum sealed. 55 celcius for 2 hours sous vide. Pan sear again after in a non stick pan π The rest we kinda made up. Weβre not very good at recipes π π
Dashi, ginger, lemongrass, miso paste, mirin, sake, chicken stock π
