Massive Porterhouse x 3 cook time check

Post Body

I have (3) massive porter house steaks that measure roughly 3.25lbs each and are around 2.5in to 2.75 thick. They will all go in the pool at the same time. How long would you cook them for to reach 130?

Second question, I need about 4.5 hours from start to finish on these because I won’t be home. My Anova doesn’t have Wi-Fi so my plan was to defrost the steaks a little, season them, reseal, then cold water start them. Do you think I will have a texture issue if I chuck them in partially frozen and cook for 4.5hr?

I don't agree with this at all...a 3lb steak is basically a roast. With a bone they will take at least 3 hours.
