Best open source phone OS

Hey there,
I was chatting with a colleague a few months ago about open source phone OS. I am a bit into tech and stuff and he is a complete maniac. So he just completely ranted about phone OS and whatnot and I was there like "yeah great tell me more"...
Now I am wondering if I could swap my MIUI to something open source, if it would make sense, if it's complicated and so on. And what the best options would be.
Phone is a Mi 9T Pro.
