Hot water offset smoker

G’day from down under fellow smokers!

I have been an avid smoker for the last 6 or 7 years and can not get enough of it! I started with a small wood chip box that you could use on your regular bbq, then upgraded to a barrel smoker and finally onto an offset smoker. I just can’t help myself and I have yet to hear any complaints from the missus or any mates!

My current offset smoker is awesome but has 1 glaring problem; ITS TOO SMALL! I can fit roughly 2/3kgs of spare ribs at a time or 1/2 small briskets, but what about when I want to do more?!

I have recently come into possession of an old SAXON water heater. (The type that have copper bladders inside) So what I was thinking of doing was taking the inner copper shell out and making a grill from that. The only issue is, I can’t find much, if any, information out there about copper being used in grilling/smoking. (Is it too soft/can it handle the heat, etc).

Has anyone had any experience or could offer some advice on this subject? I’ll make sure to keep everyone here in the loop with my progress.
