I recently bought an Oklahoma Joes smoker. And made some ribs yesterday. The recipe I followed was the 3-2-1. First smoke was supposed to be 225 for 6 hours. I kept the correct temp and after I flipped and let continue, the ribs were already at 160’. I was not able to foil wrap or anything. They tasted great but I am concerned about it. Is it possibly something wrong with the temp gauge? My buddy mentioned I should put a pan of water in the smoker but I am not sure what went wrong.
Any advice is welcomed. Thank you!!
