Smoldering vs burning wood - opinions?
Post Body
I got Aaron Franklin's book from the library, and one thing he mentioned got me thinking. He's pretty convinced that smoke should come from burning wood, not smoldering. This would seem to point towards an offset smoker, rather than a WSM or something like that.
I don't have enough experience to judge one way or the other. What do you guys think? Is BBQ made with a wood fire noticeably better?
