choice plate ribs (will only be going with choice from here on out). 6 hours at like 280 until probe tender. first hour and a half was mesquite at around 190. homemade chimichurri, guacamole and most importantly, homemade tortillas. single barrel willet bourbon for the bottle kill. all in all not a bad sunday
