I used a 2x2 charcoal snake in my Weber Kettle with chunks of apple wood. I wasn't sure how long it was going to take so I started it at midnight thinking it was better to be done early than late. 8.5 hours later I woke up and checked it and it was at 190 and the snake was spent. I panicked thinking it needed more time and started building another snake sans wood chunks. But on my brother's advice I checked it with a fork and it fell apart. I took it inside, wrapped it tightly in foil and stick it in a warm oven, maintaining it at food safe temperature until the afternoon. Come 3:00 pm it was still hot and juicy and was absolutely delicious.
Now I'm obsessed with smoking and I partly blame you degenerates.
