First time spare ribs trimmings

  Hey everyone, I bought some spare ribs and did them in the smoker. I trimmed the meat off the bottom along the bones and the chuck on bone in the end and trimmed the side up past the first two cartilage like bones. Then I cut the flap of meat off the back and took the silver skin off. 
 I took the ends and pieces and rubbed them with mustard and dry rub. I then seared them on the grill then played them in a pan with a stick of butter and some homemade BBQ sauce. I put a pellet smoking tube in the grill and let it to cook in the pan for about 2 hours until the reached about 199 F. I then took them off and quick charred them up a little on the grill again. I let them cool a little before picnicking any cartridge and bones out. I did this the day before and just plan on reheating them in the oven. 
     What should I do with the trimmings instead or what could I have done different?
