I’m currently smoking two pork butts at 230*. They’re sitting at 189 (8lbs) and 187 (7.72) and may end up being done a bit early than I anticipated. I usually pull from the smoker and wrap it in foil between 201-203 and let it rest in a cooler for an hour.
If they are done too early, can I pull them from the smoker, wrap them tightly in foil, set the smoker to 180* and put them back on to maintain temp without drying out?
Then when it’s closer to showtime pull it out and stick in the cooler?
