I did a pork tenderloin mushroom Marsala served over fettuccine recently that my fiancé loved. It would go great with risotto as well.
I agree though, pork tenderloin is one of my favorite things to make for guests. Most overcook it so they don’t know how good it can be, similar to Turkey. But it gets old quick.

Going to try this. We normally do smoked chicken thighs for Banh Mi, but pork tenderloin is a great idea.
