Gravity fed smokers โ€” how are we dealing with wood / smoke?

I personally own a Masterbuilt Gravity Series. In the manual, it says we have two options for adding wood to our smokers; a) mix wood chunks into the hopper with the charcoal or b) throw chunks directly into the ash bucket.

The reason I ask is because Iโ€™ve done it both ways (and even a combination of the two) after a year of owning it. Some personal observations โ€” mesquite burns really hot, really fast. Itโ€™s sketchy to put it in the hopper โ€” when adding wood to the ash bucket, the smoke appears dirtier / white (I havenโ€™t noticed an effect on the taste).

Just curious to know how other gravity fed smokers are managing wood / smoke.
