So I have been doing some smoking in my Oklahoma Joe's Highland Offset Smoker and I have noticed it being very hard to keep it at 225-250.
Whenever I add on a wood chunk or a wood split to the fire box, it almost always spikes the temperature to over 300 and if I let it go down to the 225-250 range, there is almost no wood left in the fire basket and I am running off of the remaining charcoal lumps and thus not getting any of the smokey wood flavor added to the meat.
Not sure if I need to try out a different charcoal lump (I've been using Cowboy Hardwood Hickory Lumps) or try breaking my chunks into smaller pieces.
I just see tons of people sharing what their fireboxes look like online and they constantly have a strong fire going in their fire box, but yet their temps are at a steady 250.
Any help is appreciated, thanks in advance!
