Calculating Labor for COGS

Hi everyone,
I work at a somewhat small but very busy food manufacturing facility. We are working to better understanding our COGS and are wondering how people calculate labor into their COGS? By that I mean, what math/formula is being used to add to the manufacturing costs for the goods. We use an inventory management software so we can calculate manufacturing costs fairly seamlessly, it's the labor part and other variables that give us some fits.
