Veggies in Asian dishes

I've seen and written down quite a few recipes on here for dishes like sesame chicken, orange chicken, Asian barbecue chicken, Korean beef, etc. They rarely contain vegetables though, so what are some good veggies to cook with them? I'm a fan of snap peas but I'm not sure they'd work in a slow cooker.
